Caroline's diary fills from the middle of the week, which is a useful thing to know when the trip is only two nights long. She keeps Spanish and English and will run a whole evening in either without being asked twice. Ninety minutes is where she starts, because an hour on a Friday tends to finish before a guest has entirely arrived in it. At twenty-nine she has the patience for a visitor who wants to talk for the first stretch, and she says as much. De Pijp is where her evening begins, and the market end of it is asleep long before she leaves.

Caroline decides which bookings she takes and may decline any of them; she sets the limits for what a session includes, says what they are, and may end a visit at any point, as the terms set out.
